Can someone please explain 'bounce' on wedges? What does a higher bounce value mean?

Would you suggest a 56 with 10 bounce or 12?

52° wedges standard bounce is 8°, I don't think you'll see much OEMs offering much different bounce angles for these gap wedges.
A 60° wedge with 8° bounce is considered high. 10° bounce is considered low for a 56° SW. 12° is standard and 14° is high.
If you have a steeper angle of attack type swing, you might prefer/like higher bounce angles. If you play firm conditions, you might like low bounce and if you're playing fluffy sand/turf etc, higher bounce will prevent the club from digging too much. If you like opening the face of your wedges etc. you might find lower bounce cuts down on blading the shot.
Some people prefer versatility and go low bounce on their SW and high bounce on the LW.
