How would you even know this unless there was a creek or bunker you had to get over? I know my longest non-cart path or massive cliff drive, but couldn't even tell you my a average carry.

Agreed, unless it was a soggy fairway and the ball is stuck in the fairway with no roll, or like you said you knew the exact carry over a hazard and you can estimate where it first hit.
Having said that, in the spirit of this thread...number 11 at thundering waters. Over the lake, was 315 to the pin (lasered it), carried the water, which was 265 to the edge, flew it over by about 10-15 yards and stopped rolling just before the green which was a middle pin. So the carry would be somewhere between 275-280 in my estimation
