Another vote here for Loyalist and Picton, both very different courses, but ones I would play again for sure.
Another slightly leftfield recommendation, Rivendell in Verona, 20 mins northwest of Kingston, or about an hour from Belleville: https://www.rivendellgolf.club/home
It is a random country course, not the same level as the others in this thread, and don't go out of your way, but incredibly good value for what it is, I try and play it at least once every year if I'm in the area, a couple of really unique and challenging holes, you absolutely won't regret playing it.
